
Grilled Chicken Street Tacos
Ingredients
- 1/4 cup fresh lime juice
- 1/4 cup olive oil
- 3 cloves garlic peeled and smashed
- 2 tsp. ground cumin
- 1 1/2 tsp. ancho chili powder
- 1/4 cup fresh cilantro chopped
- Salt and pepper to taste
- 1 1/2-2 lbs boneless skinless chicken breasts
Toppings
- Red onion diced
- Cilantro chopped
- Fresh salsa in moderation
- Avocado sliced
- Your favorite hot sauce
- Sour crema
Instructions
- Make the taco marinade by stirring together lime juice, olive oil, garlic, cumin, chili powder, cilantro, salt, and pepper.
- Place chicken in a large resealable bag. Pour marinade over chicken and seal bag. Marinate in fridge for 1–6 hours.
- Cook chicken thoroughly on a preheated grill, about 5 minutes per side. Let rest briefly, then dice chicken into bite-sized cubes. Layer onto warm R3-friendly tortillas or tortilla alternatives with desired toppings.
