Grilled Chicken Street Tacos

Ingredients
  

  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 3 cloves garlic peeled and smashed
  • 2 tsp. ground cumin
  • 1 1/2 tsp. ancho chili powder
  • 1/4 cup fresh cilantro chopped
  • Salt and pepper to taste
  • 1 1/2-2 lbs boneless skinless chicken breasts

Toppings

  • Red onion diced
  • Cilantro chopped
  • Fresh salsa in moderation
  • Avocado sliced
  • Your favorite hot sauce
  • Sour crema

Instructions
 

  • Make the taco marinade by stirring together lime juice, olive oil, garlic, cumin, chili powder, cilantro, salt, and pepper.
  • Place chicken in a large resealable bag. Pour marinade over chicken and seal bag. Marinate in fridge for 1–6 hours.
  • Cook chicken thoroughly on a preheated grill, about 5 minutes per side. Let rest briefly, then dice chicken into bite-sized cubes. Layer onto warm R3-friendly tortillas or tortilla alternatives with desired toppings.
