Season both sides of pork chops with salt and pepper. Add olive oil to a large skillet over medium heat. Once oil is warm and shimmering, add pork chops and cook until golden and cooked through. Remove from skillet and place on a plate to keep warm.
Add mushrooms to skillet and cook until softened, about 5 minutes. Add minced garlic and cook until fragrant, about 1 minute more.
Add heavy cream, Parmesan, oregano, and red pepper flakes to the skillet. Season with salt and pepper. Bring sauce to a simmer and cook until thickened, about 3 minutes. Gently stir in spinach and cook until wilted, (about 2 minutes).
Return pork chops to skillet and cook for five minutes until warmed through.
