Cold Avocado and Cucumber Soup

Ingredients
  

  • 2 large cucumbers
  • 2 avocados
  • Zest and juice of 3 limes
  • 1 tsp. sea salt

Instructions
 

  • Peel cucumbers. Cut lengthwise and use a spoon to scrape out seeds from center. Discard seeds.
  • Roughly chop cucumbers. Peel and roughly chop avocados. Combine everything in a powerful blender and blitz until creamy and smooth.
  • Serve at room temperature or chill if desired.
