
Cold Avocado and Cucumber Soup
Ingredients
- 2 large cucumbers
- 2 avocados
- Zest and juice of 3 limes
- 1 tsp. sea salt
Instructions
- Peel cucumbers. Cut lengthwise and use a spoon to scrape out seeds from center. Discard seeds.
- Roughly chop cucumbers. Peel and roughly chop avocados. Combine everything in a powerful blender and blitz until creamy and smooth.
- Serve at room temperature or chill if desired.
